charcoal (medium heat)While the bananas cook, pour the very cold cream and the powdered sugar into a lidded jar of at least 350 ml, filling it no more than a third full. Screw the lid on tightly and shake hard for , until you can no longer hear it sloshing and it has thickened. Stop as soon as it goes quiet; shaken too long it turns into butter.

Cook's tip
Make the brown-sugar butter at home and pack it in a small tub. Keep the cream in the coldest spot of the cooler; lukewarm cream won't thicken no matter how long you shake.
Cooking it at camp
At home, bake the foil-wrapped bananas at 200 °C for 12 to 14 minutes and whip the cream with a whisk or hand mixer to soft peaks. Toast the nuts in a frying pan the same way.
