Garlic-Soy Bossam Rice Bowl
Doenjang-simmered pork belly, sliced thick and glazed in garlic soy, over rice with a tangy garlic-chive salad and a runny fried egg.

Lift out the pork, let it cool for 5 minutes, slice it 1 cm thick and pat dry. Heat the oil in a 24 cm pan on medium-high heat, lay the slices in a single layer and brown them for , turning once. Pour in the sauce and shake the pan for until it turns syrupy and coats the meat. The honey burns quickly, so take it off the heat as soon as it thickens.

Cook's tip
Break the yolk and mix it into the rice and sauce; that's the best part. Spring onions or shredded perilla leaves can replace the chives. With leftover boiled pork, skip steps 1 and 2 and it's ready in 20 minutes.
Cooking it at camp
Boil and slice the pork at home. At the campsite, use one pan to glaze the pork and then fry the eggs, and heat pouches of ready-cooked rice for ease. Dress the chives just before eating.
