Spiced Bossam with Sweet-Spicy Radish
Blanched skin-on pork belly simmered in a shiitake, bay and coffee broth, served restaurant-style with tangy, sweet-spicy bossam radish.
Method
Cut the pork into blocks 5–6 cm thick, put them in a 20 cm pot and cover with cold water (not from the list). Bring to the boil on high heat and boil for more, until grey scum and fat rise. Drain, rinse the pork under running water and rinse out the pot. This blanching removes any gamey smell and keeps the broth clear.

Add the halved onion, leek pieces, garlic, sliced ginger, peppercorns, bay leaves, dried shiitake and coffee, and boil on high heat for . The coffee gives the meat an appetising colour and masks porky notes; the shiitake adds savoury depth.

high heatOnce the broth is boiling, add the blanched pork, skin side up. When it returns to the boil, turn the heat from high heat down to medium-low heat, set the lid ajar and simmer for . Keep it at a lazy bubble so the meat doesn't toughen. It is ready when a chopstick slides through the skin with no resistance and the juices run clear.

When the strips are soft enough to bend, squeeze out the liquid very firmly with your hands or a cloth; if you don't, the dressing turns watery.

Add the chilli flakes to the squeezed radish first and massage for 2 minutes to stain it red. Then mix in the fish sauce, minced garlic and honey, and finally fold in the garlic chives, cut into 4 cm lengths, and the sesame seeds. Taste and adjust the sweetness and salt.

Cook's tip
Mixing shoulder and belly gives you lean and rich bites on the same plate. The radish tastes even better made a day ahead and chilled. If the sliced pork cools, spoon over a ladle of hot broth to bring back the moisture. Use plain instant coffee only, never a mix with sugar or creamer.
Cooking it at camp
Blanch the pork at home and keep it chilled, so at the campsite you only need to simmer it in the broth. Dress the radish at home too and pack it in a sealed tub. If your stove is weak, keep the lid on, add about 10 minutes to the simmer and check with a chopstick.
