Bratkartoffeln Tortilla Flammkuchen
Golden pan-fried potatoes and bacon on a sour-cream-spread tortilla, baked crisp in a hot oven: Bratkartoffeln meets Flammkuchen in an easy flatbread.
Method
Put the potatoes, skins on, in a 16 cm pot, cover with cold water by 2 cm, bring to the boil over high heat, then turn down to medium heat and simmer for . (Using leftover boiled potatoes? Skip this step.) Peel, spread out to cool for about 15 minutes, then slice thinly, 3 mm thick.

Leave them alone for the first 2 to 3 minutes, then turn once or twice when the potato edges are golden and the bacon fat runs. They'll cook again in the oven, so they don't need to be fully crisp.

Cook's tip
The thinner the potato slices, the crisper they bake with the tortilla. Crème fraîche instead of sour cream gives a more authentic Flammkuchen flavour. Swap the bacon for mushrooms for a vegetarian version.
Cooking it at camp
No oven? Put a tortilla in a lidded cast-iron pan over low heat, cover and cook for 5 to 7 minutes: the base crisps and the cheese melts. Boil the potatoes at home.
