Bratkartoffeln (German Fried Potatoes with Bacon and Onion)
Germany's everyday classic: boiled, cooled potatoes sliced and pan-fried until golden and crisp with smoky bacon and soft onions.
Method
Scrub the potatoes and put them, skins on, in a 18 cm pot with enough cold water to cover by 2 cm. Bring to the boil over high heat, then turn down to medium heat and simmer for . They're done when a knife goes in with just a little resistance; overcooked potatoes break up in the pan.

high heat→medium heatDrain and let the potatoes steam dry for a moment, then peel them while warm, holding them in a paper towel. Let them cool completely for at least (cooked the day before and chilled is best for crispness). Cut the cold potatoes into 5 mm slices.
Thinly slice the onion and cut the bacon into 1 cm strips. Put the bacon in a large 28 cm frying pan without oil and cook over medium heat for , until plenty of fat has melted out and the edges are lightly crisp.

If the pan size shows '×2', fry in two batches with half the oil each (crowded potatoes steam instead of crisping). Leave them completely alone for so a golden crust forms underneath, then turn them with a spatula and fry for more, turning once or twice more until golden all over.

Cook's tip
The secrets are cold potatoes and patience: warm potatoes crumble, and constant stirring stops a crust forming. Salt at the end so the potatoes don't draw out moisture and go soggy. Serve with a fried egg, gherkins or sausages for a proper German meal.
Cooking it at camp
Boil the potatoes at home and bring them in their skins. At camp, use a cast-iron pan over the burner or embers and follow the same order; the heat is uneven, so give the pan a turn now and then.
