ovenSpread a spoonful of cooled béchamel over each cachito and sprinkle with the rest of the cheese. Bake in the oven for . The number of trays is 1×; with 2×, bake on two shelves and swap halfway. They are done when the cheese is bubbling with brown spots.
Add in this stepGruyère or Emmental, grated 50 g
ovenLet them sit on the tray for 5 minutes so the béchamel sets, then transfer to plates. Eat warm with a knife and fork, or by hand.
Cook's tip
The béchamel must be completely cool or it slides off the risen dough. If the tops brown too fast, cover loosely with foil. Add a runny fried egg on top and you have Croque-Madame cachitos.
Cooking it at camp
These need rising time and an oven, so bake them at home. At camp, warm them in a covered pan lined with baking paper over low heat for 6–8 minutes, until the cheese melts again.
