Guava, Ham and Cheese Cachito Twists
Puff pastry filled with ham, melting cheese and guava paste, twisted into spirals and brushed with guava glaze, a sweet-salty café bake.

low heatUnroll the pastry on baking paper and scatter the ham, cheese and diced guava over one half. Fold the other half over, press firmly with your palms, then cut it into 8 strips of equal width. Hold each strip at both ends, twist it 3 times in opposite directions and lay it 5 cm apart on a lined tray, pressing the ends down.
Add in this stepPuff pastry sheet, thawed 200 gSliced ham 80 gMozzarella or queso blanco, shredded 80 gGuava paste 40 g
Brush with beaten egg, sprinkle with sesame and chill for . Chilling sets the pastry so the twists don't unwind in the oven.
Add in this stepEgg (for brushing) 1White sesame seeds 1 tsp
Bake in the oven for . The number of trays is 1×; with 2×, bake on two shelves and swap halfway. They are done when puffed, deep golden and browned underneath.
ovenBrush with the warm guava glaze straight away and cool for 5 minutes. Melted cheese and guava are extremely hot, so don't bite in at once.
Cook's tip
Guava paste is sold in firm blocks in Latin American shops; apricot or fig jam makes a good sweet-salty substitute. If cheese leaks and sticks to the paper, lift it off with a spatula before it cools.
Cooking it at camp
They need an oven, so baking them at home is easiest. At camp, re-crisp them in a covered pan lined with baking paper over low heat for about 5 minutes.
