About servingsHomemade mayonnaise uses raw egg yolk. For young children, pregnant women, older people or anyone with a weakened immune system, use a pasteurised egg or bought mayonnaise, chill as soon as it's assembled and eat the same day.

  3. Make the salsa golf. Set a bowl on a damp cloth so it doesn't slide and whisk the yolk, mustard, a little lime juice and a little salt. Spread out and cool completely for , then add the ají amarillo paste, half the lime juice, the oil and the salt, and work it with the heel of your hand until silky smooth. It should taste boldly seasoned, as cold food tastes milder.

  5. Mash the avocado very finely with a fork (or blend it) with the remaining lime juice and salt until creamy. Toss the chopped shrimp with half the salsa golf.

  7. Lift the rings off with a gentle twist, top each causa with whole shrimp, pipe dots of the remaining salsa golf and finish with cilantro leaves.

Cook's tip

The finer you sieve the potato, the silkier it gets. Mayonnaise emulsifies best when everything is at room temperature; short on time, mix 4 tablespoons of good bought mayonnaise with the ketchup and a squeeze of lime. Cook the shrimp in water off the heat so they stay tender.

Cooking it at camp

Layer it in clear cups instead of rings and it still looks great at camp. Use bought mayonnaise instead of raw-yolk mayo, keep everything in the cooler below 5 °C and eat it the same day. Cook the shrimp at home and bring them chilled.
