Causa Limeña
Lima's chilled potato classic: silky mashed potato seasoned with yellow chilli and lime, layered with creamy chicken salad and avocado.
Method
Scrub the potatoes and put them, skins on, in a 3 L pot. Cover with cold water and add some of the salt. Bring to the boil on high heat, lower to medium heat and cook for , until a skewer slides right through, then drain. Cooking them in their skins stops them absorbing water, so the mash won't turn gluey.

Cook's tip
Season the potato only once it is completely cool or it turns sticky. Ají amarillo paste is sold in Latin grocers and online; at a pinch, blend roasted yellow pepper with a pinch of turmeric and a little chilli for a similar colour and flavour. It contains mayonnaise, so keep it chilled and eat within a day.
Cooking it at camp
It needs no cooking on site, so make it at home, pack it in a lidded container and carry it in a well-iced cooler. With mayonnaise and chicken inside, keep it below 5 °C and eat it on the first day. Add the toppings at camp.
