Thai Red Curry Cazuela with Coconut, Pumpkin and Corn
Cazuela's whole potato, pumpkin and corn pieces stay, but the broth becomes a coconut red curry with lemongrass: Chilean meets Thai.

Cut the chicken into 4 cm pieces. Peel and halve the potatoes, cut the squash into 3 cm chunks and the corn into 3 cm rounds. Bash the lemongrass with the back of a knife and cut it into 5 cm lengths, and tear the lime leaves to release their scent. Cut the beans into 4 cm lengths.
Heat the oil in a 3 L pot on medium heat, add the curry paste and some of the coconut milk and fry for , stirring, until it smells intensely fragrant and red oil beads on the surface.

Cook's tip
Curry pastes vary a lot in heat, so start with less and add more later. Add the basil and lime off the heat to keep them bright. Rice noodles in the broth make a great alternative to rice.
Cooking it at camp
Curry paste and canned coconut milk keep without refrigeration, so they travel well. Cut the vegetables at home and keep the chicken in the cooler. One burner is enough; just keep it at a gentle simmer so the coconut milk doesn't split.
