Kimchi Chai Tow Kway (Singaporean × Korean)
Crisp-fried radish cake tossed with stir-fried kimchi and a gochujang glaze and wrapped in egg: Singapore's hawker classic meets Korean kimchi fried rice.

Cook's tip
The sourer the kimchi, the deeper the flavour; if it's very sour, add a little more sugar. A handful of mozzarella melted on top under a lid for 1 minute makes it a hit with kids.
Cooking it at camp
Bring the radish cake and kimchi in the cooler and the sauce mixed in a small jar, and it's a 20-minute camp breakfast with one burner and a cast-iron pan. Double-wrap the kimchi container so the smell doesn't escape.
