Cook's tip

Ready-made radish cake (lo bak go) from an Asian grocer lets you skip steps 1–4 and finish in 15 minutes. Stirring too often mashes the cubes, so let them crust before turning. Chai poh is salty; give it a quick rinse.

Cooking it at camp

Steam and set the radish cake at home, cut it into cubes and bring it in the cooler. At the campsite, fry it in a cast-iron pan or wide frying pan on the burner; if the flame is weak, fry in smaller batches so it crisps.
