Chakhokhbili Herb Orzo Bake with Melted Mozzarella
A one-pan oven dish: chicken, tomatoes and khmeli suneli-spiced orzo baked together, topped with bubbling mozzarella and a shower of herbs.
Method
Preheat the oven to 200 °C. Cut the chicken into bite-sized 3 cm pieces, finely chop the onion, mince the garlic and dice the tomatoes into 1 cm cubes. Heat the stock; cold stock makes the orzo cook unevenly.
Heat the olive oil in an ovenproof 24 cm pan (metal handle) over medium-high heat. Season the chicken with half the salt, add it and cook for until golden on the outside. It will finish cooking in the oven.

Cook's tip
No orzo? Use small pasta shapes and adjust the baking time to the packet's cooking time. For heat, add a chopped green chilli or chilli flakes in step 2. Leftovers reheat well with a splash of stock.
Cooking it at camp
Use a lidded Dutch oven instead of an oven and put coals on the lid as well as underneath. Orzo catches easily, so keep the heat low and stir once halfway. Keep the chicken in the cooler below 5 °C.
