Method

  1. Beat the eggs with chopsticks without making foam, mix in part of the dashi, half the soy sauce and mirin and the salt, then pour through a fine sieve. The dashi must be cooled.

  2. Put the warm rice in 2 × 500 ml heatproof bowls (wide, shallow soup or rice bowls) and press it gently flat with a spoon. Pour the egg mixture quietly over the rice, skim off any bubbles and cover with foil. The rice soaks up a little of the custard and turns soft and moist.

Cook's tip

Use warm rice: cold rice makes the centre slow to set. Blanched prawns or tinned crab meat work instead of crab sticks, and add more ginger if you like it. The glaze thickens as it cools, so pour it on just before eating.

Cooking it at camp

At the campsite, cook rice in a pot, pour the egg mixture straight over it, cover and steam on the lowest flame for about 10 minutes. Warm the glaze separately in a small mug.
