Chicken Karahi
Pakistan's favourite chicken dish: bone-in chicken cooked fast in a wok-like karahi with tomatoes, ginger, garlic, green chillies and crushed whole spices, no onion.
Method
Prep: pat the chicken very dry with kitchen paper (wet chicken makes the oil spit). Quarter the tomatoes. Pound the garlic and 60% of the ginger to a paste in a mortar or on a fine grater, and cut the rest of the ginger into thin matchsticks. Crush the cumin, coriander seeds and peppercorns coarsely in the mortar, and slit the green chillies lengthways.
Heat the oil in a 28 cm karahi or wok on high heat. It's ready when the surface shimmers and a piece of chicken sizzles immediately (about 180 °C). Lower the chicken in, laying it away from you to avoid splashes, and stir-fry for , until it has turned white all over with a few golden patches.

It's ready when the tomatoes have cooked down to a thick, glossy masala and oil separates at the edges. If it catches, add 2 tbsp water and scrape. Cut into the biggest piece to check it's cooked through.

Cook's tip
The secret of karahi is high heat and a short cook: don't add water, let the tomatoes provide all the moisture for a concentrated flavour. Bone-in chicken tastes deeper, but if you use boneless thighs, cut 2 to 3 minutes off step 5. For less heat, halve the chilli flakes.
Cooking it at camp
One deep wok or cast-iron pan on a camping burner works perfectly. Crush the spices at home into a small tub and make the garlic-ginger paste ahead. Keep the chicken below 5 °C in the cooler and use a separate board and tongs for raw chicken.
