Cook's tip

The filo crunch stays crisp for two days in an airtight box, so make extra to scatter over yogurt or salads. Using shredded leftover roast chicken instead of breast? Halve the time in step 3.

Cooking it at camp

Bake the filo crunch at home and bring it in a tub; at the campsite one pan does the onion, chicken, eggs and toast in turn. Keep the raw chicken sealed in the coldest part of the cooler, away from other food.
