Cook's tip

Orange blossom water is strong, so start with less and taste. The unbaked parcels keep for a day in the fridge, which makes them ideal for guests. Warm filling melts the filo and tears it, so let it cool completely before wrapping.

Cooking it at camp

Make the filling at home; at the campsite, wrap the parcels and bake them in a paper-lined Dutch oven with plenty of coals on the lid and fewer underneath. Check the bases after about 15 minutes, and keep the filo in the cooler until the moment you use it.
