Gochujang Kimchi Chili

Chili's beef and beans meet Korean gochujang, gochugaru and sautéed kimchi in a sweet, spicy, savoury bowl served over steamed rice.

Method

  1. Cut the onion into 1 cm pieces, squeeze the kimchi lightly and chop it into 1 cm strips, mince the garlic and ginger, and rinse and drain the beans. Heat the oil in a 20 cm pot on medium-high heat, add the beef in clumps and leave it for to brown, then break it up and cook for more until browned all over.

  2. Lower to medium heat, add the onion and kimchi and cook for , until the kimchi turns slightly translucent and its sour smell mellows. Add the garlic and ginger and cook for 1 minute more.

  3. Turn down to medium-low heat, add the gochujang, gochugaru and cumin and stir for . Frying the gochujang in the fat takes away its raw edge and deepens the flavour; it scorches easily, so keep stirring.

  4. Add the tomatoes, stock, soy sauce, honey and beans and bring to a boil on medium-high heat, about . Lower to low heat, set the lid ajar and simmer for , stirring to the bottom now and then.

  5. Uncover and simmer on low heat for more, until thick. If it's too spicy, add a little more honey; if it needs salt, add soy sauce. Turn off the heat and drizzle in the sesame oil.

  6. Fill bowls with hot rice, spoon the chili generously over the top and scatter with scallions and sesame seeds.

Cook's tip

Sour, well-fermented kimchi tastes best; if yours is young, sauté it a little longer. Gochujang varies in sweetness and salt, so adjust the honey and soy sauce by taste. A runny fried egg or some cheddar on top is excellent.

Cooking it at camp

One pot makes it great for camping. Pack the kimchi in an airtight container so it doesn't perfume the cooler, and pre-mix the gochujang, gochugaru and cumin in a small tub. Cook rice in a camping pot or bring ready-to-heat rice.
