Chili Mac and Cheese Bake
Macaroni in a sharp cheddar sauce, swirled with rich chili and baked under melting cheese and crushed tortilla chips: gooey, crunchy and very shareable.
Method
Preheat the oven to 200 °C. Bring the water to a boil in a 20 cm pot on high heat, about , then add the salt and pasta. Cook it 2 minutes less than the packet says and drain; it keeps cooking in the oven, so slightly underdone pasta won't turn mushy.

Cook's tip
Undercooking the pasta is the key to a bake that isn't mushy. Leftover chili? Use it instead of steps 2 and 3. Add the tortilla chips just before baking so they stay crunchy. Like it hotter? Add more jalapeño.
Cooking it at camp
Layer everything the same way in a lidded cast-iron Dutch oven and bake over coals, with coals on the lid as well, for 15–20 minutes. Make the chili and cheese sauce at home and carry them chilled; then only the pasta needs cooking on site.
