Cook's tip
Roast more pork than you need: leftovers are great the next day in sandwiches, rice bowls or tacos. Mixing fresh orange and lime juice 2 to 1 gets close to Cuban sour orange. Always rest the meat well before slicing so the juices stay in.
Cooking it at camp
Roast and slice the pork at home and bring it in the cooler; at camp you only need to press the sandwiches between two cast-iron pans. Carry the mojo sauce in a small jar and warm it in the pan to serve.
