Cook's tip
Without Cuban bread, a soft baguette or sub roll without a hard crust is the closest match. Leftover roast pork works perfectly; just skip steps 1 and 2. A true Cubano has no mayonnaise or lettuce.
Cooking it at camp
At camp, marinate the pork at home and bring it in the cooler, then press the sandwiches between two cast-iron pans, or wrap them in foil and press them on the grill with a heavy pan.
