Cook's tip

Dry potatoes crisp; wet ones steam. Spread the fries so they don't touch. Leftover curry goat from the classic recipe turns this into a 35-minute dish: pull the meat off the bone, chop it and reheat it in its gravy. Lamb shoulder works too.

Cooking it at camp

Cook the curry goat at home and reheat it in a pot at camp. Instead of oven fries, fry thick potato wedges in a cast-iron pan with 1 cm of oil, or use frozen fries in a camping air fryer. Cover the pan for a minute to melt the cheese.
