Cook's tip

Crack each egg into a cup first, then slide it into its well; it keeps the yolk whole and catches any shell. If the sauce dries out before the eggs set, add a splash of water around the edges. No palm oil? Use olive oil with an extra pinch of smoked paprika.

Cooking it at camp

A perfect campfire breakfast: blend the pepper base at home and carry it in a jar in the cooler. At camp, cook everything in one lidded cast-iron pan on a burner or over embers, and warm the flatbread on the grill.
