Beef Shin Efo Riro with Prawns, Smoked Fish and Two Greens
A deeper, restaurant-style efo riro: slow-braised beef shin, a fire-charred pepper base enriched with reduced stock, juicy prawns and a mix of spinach and kale.
Method
Put the beef shin in a 18 cm pot with a quarter of the onion (sliced), the thyme, curry powder, half the stock cubes and half the salt. Cover and let it sweat on medium heat for 5 minutes, then add the water and simmer, partly covered, on medium-low heat for , until the meat is very tender and the connective tissue has turned soft and sticky.

Cook's tip
Beef shin needs long, gentle cooking; if a piece still feels tough, give it another 15 minutes before moving on. Charring the peppers under the oven grill (broiler) works too. Make the beef and stock a day ahead: the fat sets on top of the chilled stock and is easy to lift off.
Cooking it at camp
Braise the beef, reduce the stock and char and blend the peppers at home; carry them and the squeezed greens cold in a well-iced cooler, with the prawns on the ice. At camp it becomes a one-pot dish: fry the base, add the meat, fish and prawns, and finish with the greens.
