Gochujang Cream Alfredo

Fettuccine in a creamy Alfredo sauce warmed up with butter-fried Korean gochujang, finished with spring onion and toasted sesame: sweet, savoury and gently spicy.

Method

  1. Bring the water to a boil in a 20 cm pot over high heat, about , then add the salt. While it heats, mince the garlic and thinly slice the spring onions, keeping the white and green parts apart; the whites go into the sauce.

  2. Add the fettuccine and separate the strands with tongs for the first minute. Cook over medium-high heat for (1 minute less than the packet says). Scoop out a mug of pasta water before draining.

  3. Meanwhile, melt the butter in a wide 26 cm pan over medium-low heat and cook the garlic and spring-onion whites for until fragrant. Before the garlic browns (it turns bitter), stir in the gochujang and fry for , stirring, until the butter turns red and smells toasty.

  4. Pour in the cream and stir until the gochujang has fully dissolved. Let it bubble gently at the edges over medium-low heat for , until thick enough to coat the back of a spoon. A hard boil can make the cream split.

  5. Lift the pasta into the pan with tongs and toss over low heat for , adding pasta water a little at a time. Turn off the heat, scatter over the cheese and toss again until the sauce clings in a glossy coat. Taste, and loosen with a splash more pasta water if needed.

  6. Plate and sprinkle with the spring-onion greens and sesame seeds. Serve straight away.

Cook's tip

Gochujang varies a lot in heat and sweetness, so start with less and add more to taste. If it's too spicy, a little extra cream softens it. Crispy bacon or sliced chicken breast turns it into a hearty meal.

Cooking it at camp

On a single burner, cook the pasta, drain it, then make the sauce in the same pot. Keep the cream below 5 °C in the cooler and use an opened carton the same day. Decant the gochujang into a small sealed tub.
