Cook's tip

Leave some texture in the beans rather than puréeing them smooth. Leftover bean smash keeps 3 days in the fridge and is great in tacos or wraps. Add a few drops of hot sauce if you like heat.

Cooking it at camp

Make the bean smash at home and pack it in a tub. At camp, toast the bread on the grill or in a cast-iron pan and fry the eggs in the same pan: one pan to wash.
