Cook's tip

Slightly cooled rice crisps better and breaks up less than freshly cooked rice. The broth must be at a full boil when you pour it, or there is no sizzle and the crunch fades. Eat before the rice softens; extra broth can be served in a small cup on the side.

Cooking it at camp

Make the meat and broth at home and carry them in an iced cooler. Crisp the rice on a griddle or pan over the campfire for a smoky edge, and bring the broth to a boil for at least 1 minute before pouring.
