Cook's tip
Brisket gives the broth a deeper, sweeter body, and chilling and de-fatting overnight is what makes it restaurant-clear. Season the meat before reheating so the flavour soaks in. Slit the jujubes and remove the stones to avoid bitterness.
Cooking it at camp
Do everything up to de-fatting and seasoning the meat at home and pack broth and meat in separate sealed containers in an iced cooler. At the campsite combine them, boil hard for at least 1 minute, then add the noodles and egg garnish.
