Sabzi Crispy Rice Bowl
A café-style bowl: golden crispy rice topped with garlicky mushrooms, ghormeh sabzi herbs and beans, cool garlic yogurt and a fried egg.
Method
Stir the yogurt with the finely grated garlic and the salt, and chill until serving.

Break up the cold rice with your fingers and mix in the turmeric. Heat the oil in a non-stick 24 cm frying pan over medium heat, spread the rice in an even layer about 1.5 cm thick, press it down firmly with a spatula and cook without stirring for , until the bottom is a deep golden, crunchy crust; lift an edge to check. Slide it onto a board, crispy side up.

medium-high heatTurn the heat to medium heat, add the remaining oil and the finely chopped parsley, cilantro and spring onions, and fry for , stirring, until darker and fragrant. Stir in the fenugreek leaves and the drained beans and heat through. Season with lime juice, salt and pepper: it should taste bright, herby and sour.

Cook's tip
Rice cooked the day before and chilled crisps best; freshly cooked rice just sticks. Refrigerate cooked rice within an hour of cooking and use it within a day. Swap the mushrooms for chickpeas or diced leftover lamb.
Cooking it at camp
Take rice cooked at home in the cooler. A heavy cast-iron pan on a camp burner makes excellent crispy rice; use a windscreen and keep the flame low and steady. Bring the garlic yogurt ready-made and cold.
