Oven-Braised Lamb Shank Ghormeh Sabzi
Restaurant-style ghormeh sabzi: seared lamb shanks braised in the oven until falling off the bone, with herbs fried in ghee and beans cooked from dry.
Method
Rinse the dried kidney beans, cover with at least three times their volume of cold water and soak overnight, for at least 12 hours. Drain and rinse again.

Pat the lamb shanks dry and season all over with half the salt and the pepper. Heat the oil in a heavy ovenproof 24 cm pot (a cast-iron casserole) over medium-high heat and brown the shanks for , turning every 2 minutes, until deep brown on all sides. If they don't fit with space between them, brown them in two rounds. Lift onto a plate.

high heat→ovenMeanwhile, wash and thoroughly dry the leek greens, parsley and cilantro, then chop finely. Melt the ghee in a wide 26 cm pan over medium-low heat. Fry the leek greens first for , then add the parsley and cilantro and fry for more, stirring often, until very dark green, almost black at the edges, and deeply fragrant. Stir in the fenugreek leaves for the final minute.

medium-low heatTake the pot out, stir in the fried herbs, cover and return it to the 160 °C oven (oven) for , until the meat pulls away from the bone easily and the beans are creamy all the way through.

Cook's tip
For a less bitter, more fragrant sourness, crack the dried limes in half and shake out the seeds before adding them. Bone-in lamb shoulder or neck chunks work the same way in about the same time. Made a day ahead, it is easier to skim and tastes deeper.
Cooking it at camp
Braise it at home and bring it in the same cast-iron pot; reheat it at the campsite over embers or a low burner, stirring gently. It keeps for 2 days in a well-iced cooler. Cooking it from scratch over a fire means tending it for over 3 hours, so this one is better made at home.
