Cook's tip

Patting the fish dry is the key to a golden crust; wet fish steams and sticks. If the sauce gets too thick, add a splash of stock or water. Any leftover sauce is lovely stirred into pasta the next day.

Cooking it at camp

Cook the rice at home or use pre-cooked rice and warm it in a pot. At camp, sear the fish and make the sauce in one heavy pan on the stove; keep the fish and sour cream cold in the cooler.
