Cook's tip

A few drops of rosewater give it a classic Gulf dessert aroma. If you can't find harees wheat, use pearled wheat or pearl barley. The puddings keep for 3 days in the fridge; add the toppings just before serving.

Cooking it at camp

Cooking the wheat takes a while, so make it at home up to step 4, pack it in lidded cups and carry it in a cooler (below 5 °C). Bring the date caramel and toasted pistachios in small separate tubs and top at the campsite. It's also lovely warmed up in the morning like a sweet porridge.
