Cook's tip
Stirring often after the rice goes in makes it mushy, so stir only once. Swapping some of the cabbage for sauerkraut adds a pleasant tang. If your pan is ovenproof, slide it under a hot grill for 2 to 3 minutes after adding the cheese for golden spots.
Cooking it at camp
A camp-friendly dish that needs only one burner and a lidded pan. Shred the vegetables at home and bring them in a zip bag, and cook covered on the lowest flame so the bottom doesn't catch. Keep the mince below 5 °C in the cooler and cook it on the first day.
