Coconut Hopper Sundae Bowls with Palm-Sugar Caramel
A café-style dessert: crisp, lightly sweet hopper bowls filled with ice cream, mango, palm-sugar coconut caramel and toasted cashews.
Method
Mix the rice flour, baking powder, sugar and salt in a bowl, whisk in the coconut milk and water until smooth and let it rest for . The sugar makes these colour faster and turn crisper than plain hoppers.

Put the palm sugar and the caramel coconut milk in a small 16 cm saucepan and simmer on medium-low heat heat for , stirring, until it thickly coats the back of a spoon. Cook's tip
The bowls can be made a day ahead and kept airtight; if they soften, 3–4 minutes in a 160 °C oven re-crisps them. Grilled banana or pineapple work instead of mango. If the caramel gets too thick, warm it with an extra tablespoon of coconut milk.
Cooking it at camp
Make the bowls and caramel at home. Carry the ice cream in a cooler with dry ice, or swap it for chilled yoghurt; at camp you only need to cut the mango and assemble.
