Cook's tip
Puff pastry rises best when cold; if it softens while you work, chill it for 10 minutes. A hot or wet filling makes a soggy base, so always cool the onion jam. Pomegranate molasses is a lovely swap for the honey.
Cooking it at camp
Without an oven, puff pastry doesn't work well at camp. Instead, spread the onion jam on a tortilla or flatbread, top with grilled aubergine and feta and heat in a covered cast-iron pan on low for 5–7 minutes until the base is crisp, then finish with honey and chilli.
