  1. Leave the stalks on, peel the aubergines in stripes, then cut a deep lengthwise slit down one side, stopping 2 cm from each end. Sprinkle the coarse salt inside the slit and all over, set slit-side down in a colander and leave for . When brown beads appear, rinse, squeeze firmly and pat completely dry. Lower in the aubergines, laying them away from you, and fry for , turning every 2 minutes, until deep golden all over and soft when pressed. Stand them on a rack to drain. For 4 servings, fry in two batches. If the oil smokes, lower the heat, and stay by the pan.

Cook's tip

Rushed onions taste harsh instead of sweet, so keep the heat low. When tomatoes are pale and watery, use cherry tomatoes or a little more paste. Always spoon the olive-oil juices from the dish over each portion.

Cooking it at camp

Fry the aubergines and make the filling at home. At camp, arrange the stuffed aubergines in a Dutch oven and bake with gentle coals underneath and on the lid for 30–40 minutes. Since it is served cool, you can also make it the day before and carry it in a cooler.
