Jambalaya
New Orleans' spicy one-pot rice: chicken, smoked sausage and shrimp cooked with onion, celery, pepper, tomato and Creole spices.
Method
Cut the chicken into 2–3 cm pieces and slice the sausage 1 cm thick. Dice the onion, celery and pepper into 1 cm pieces (this trio is the 'holy trinity') and mince the garlic. Don't rinse the rice; the surface starch helps it cook up just right here.
Heat the oil in a 24 cm heavy pot over medium-high heat and cook the sausage for until the fat runs and the edges brown. Add the chicken and part of the salt and cook for more until lightly golden outside; it finishes cooking with the rice.

high heatGive it one good stir right to the bottom, turn the heat down to low heat, cover and cook for . Don't lift the lid or stir: stirring makes the rice gummy and lets the bottom catch.
low heatScatter the shrimp over the top, cover again and cook on low heat for more, until the shrimp are pink and opaque and the rice is tender. Turn off the heat and leave it covered for to steam.

Cook's tip
If the rice is still firm but the liquid has gone, add 3–4 tablespoons of hot stock, cover and cook 5 minutes more. The chicken must be white all the way through. No andouille? Any smoked sausage plus a little smoked paprika gets close.
Cooking it at camp
A cast-iron Dutch oven over a burner or campfire is perfect. A wood fire runs hot and scorches the bottom easily, so move the pot to the cooler edge for the covered simmer. Cook raw chicken and shrimp straight from the cooler.
