Cook's tip

Leftover boiled potatoes, or leftover Jansson itself, crushed, make a great topping. No rye bread? Use a firm sourdough. Under a grill things burn in seconds, so stay by the oven for the last minute.

Cooking it at camp

Mix the topping at home and keep it in the cooler. At camp, butter the outside of the bread, toast it in a cast-iron pan over low heat, add the topping and cheese, then cover with a lid for 3–4 minutes until the cheese melts.
