Slow-Onion Jansson with Infused Cream and Butter Crumbs
A restaurant-style Jansson: slowly sweetened onions, cream steeped with garlic and bay, and a crunchy butter-panko crust.
Method
Heat the oven to 200 °C. Peel the potatoes and cut them into even sticks 4–5 mm thick with a mandoline or knife; equal thickness means even cooking. Don't rinse them; keep them in a bowl under a damp paper towel.

ovenSlice the onions thinly. Melt half the butter in a 22 cm pan over medium-low heat and cook the onions slowly for , until very soft, pale golden and sweet. If they start to catch, add a tablespoon of water and scrape the pan.

Cook's tip
Pouring the cream in warm shortens the bake and lets the potatoes absorb it better. Don't rush the onions; their sweetness is what gives this version its depth. You can assemble it to the end of step 4 a day ahead and chill it; add 10 minutes to the first bake.
Cooking it at camp
Cook the onions and infuse the cream at home, cool and pack them in the cooler. At camp, layer everything in a foil tray, cover with a double layer of foil and bake on a lidded grill or in a Dutch oven for 50–60 minutes. For the last 15 minutes, uncover, add the crumbs and put coals on the lid to brown the top.
