Method

  1. Trim the meat: thigh into 1.5 cm strips, hearts cleaned of fat and veins and halved, livers trimmed of sinew and cut into 3 cm pieces; pat dry. Finely chop half the garlic and mix it with half the oil, the cumin, three quarters of the turmeric, the coriander, baharat, pepper and most of the salt, then coat the meat. Keep the livers in a separate covered bowl, and marinate everything in the fridge for .

  2. Meanwhile, make a quick amba (mango pickle sauce): dice the mango into 1 cm cubes and put it in a small 16 cm pan with the vinegar, the rest of the turmeric, the fenugreek, pepper flakes, water and a little salt. Cook's tip

Cooking each cut separately for its own time is what makes this the advanced version; the livers go last and briefly so they stay creamy. Leftover amba keeps a week in a clean jar in the fridge and is great with eggs and roast vegetables.

Cooking it at camp

Marinate the meat at home in a zip bag and pack it deep in ice: it marinates on the drive. Bring the amba and tahini in jars, then char the onions, meat and bread in turn on a cast-iron griddle over the coals. Cook the offal on the first day.
