Jerusalem Mixed Grill (Me'orav Yerushalmi)
The Jerusalem street-food legend: chicken thigh, hearts and livers seared hard with onion, cumin and turmeric, stuffed into pita with tahini.
Method
Cut the chicken thigh into 1.5 cm strips. Trim the white fat and veins from the tops of the hearts and halve them lengthwise. Remove any white sinew from the livers and cut them into 3 cm pieces. Pat everything dry, mix the cumin, turmeric, coriander, baharat, pepper and salt, and toss the meat in the spices. Keep the livers in a separate small bowl, as they cook fastest.

Make the tahini sauce: in a bowl, mix the tahini, finely grated garlic, lemon juice and salt, then whisk in the cold water a little at a time. It seizes and thickens at first; keep adding water and it turns smooth and pourable, like yogurt.

Cook's tip
High heat and a wide pan are everything: crowd the pan and the meat stews in its juices. Pickles, a chopped tomato-cucumber salad and a hot sauce make it taste like the market stalls. If offal is not for you, replace the hearts and livers with more chicken thigh.
Cooking it at camp
A cast-iron griddle or heavy pan over a camp stove or charcoal gives you the real street-stall feel. Offal spoils quickly: keep it raw, sealed and buried in ice in the cooler, and cook it on the first day. Make the tahini sauce at home to save time.
