Cook's tip

Wet lettuce makes the dressing slide off and turn watery, so dry it well in a salad spinner or with kitchen paper. The croutons get crisper as they cool and can be made ahead. Thighs work too and stay even juicier.

Cooking it at camp

Marinate the chicken at home and carry it in the cooler, with the dressing in a jar and the washed romaine wrapped in kitchen paper. At camp, grill the chicken over the coals, and for croutons toast the pita on the grate, tear it up and sprinkle with sumac.
