Cook's tip
Saffron picks up metallic notes, so bloom it in ceramic or glass. Bone-in thighs are juicier but need 5–8 minutes longer, so always check the temperature. To release the crust, stand the pot on a cold damp towel for 1 minute before turning it out.
Cooking it at camp
Marinate the chicken overnight at home and carry it in the cooler; rinse and soak the rice at camp. Cook the rice the same way in a heavy pot on the burner, keeping the flame gentle, and grill the skewers over the coals.
