Cook's tip

Dry potatoes are what make them crisp instead of sticking. Leftover rice works: warm it through in the microwave first. For less heat, leave out the harissa and use two-thirds of the gochujang.

Cooking it at camp

At a campsite, fry the vegetables in one big cast-iron pan and the eggs at one side to save washing up. Use ready-cooked rice pouches or cook rice in a camping pot. Mix the sauce at home and bring it in a small jar.
