Cook's tip

Roasting the vegetables first drives off water so the muffins don't turn soggy. Cooled muffins keep 3 days in the fridge in a sealed box; 30 seconds in the microwave brings them back for breakfast or a lunchbox. Mozzarella works instead of feta.

Cooking it at camp

Bake them at home, cool them and pack them in the cooler for an easy campsite breakfast; reheat wrapped in foil at the edge of the grill for 5 to 8 minutes. To make them on site, cook the vegetables in a pan, pour over the egg, cover and cook on low like a frittata.
