Cook's tip
Large flour tortillas, shop-bought pizza bases or lavash work in place of pita. Make the topping the day before and refrigerate; then it takes 10 minutes for breakfast or a snack. Pipe the yogurt in zigzags from a bag for a café look.
Cooking it at camp
A large lidded pan or Dutch oven does the job. Bring the topping cooked from home, lay a pita in the pan, add the toppings, cover and heat on low for 5–7 minutes until the cheese melts. Keep the heat low so the base doesn't burn.
