Karnıyarık (Turkish Stuffed Eggplant)
Whole fried eggplants split open and packed with spiced minced beef, topped with tomato and green pepper and baked: Turkish home cooking at its best.
Method
Leave the stalks on and peel the eggplants lengthwise in stripes, leaving 1.5 cm bands of skin. Put them in a bowl of water with part of the salt, weigh them down with a plate and soak for ; this draws out bitterness and stops them soaking up so much oil. Drain and dry them completely; any water left on them makes the oil spit violently.

Pour oil 1.5 cm deep into a 24 cm frying pan and heat on medium-high heat to 170 °C (a wooden chopstick dipped in should fizz steadily). Lower in the eggplants carefully and fry for , turning, until browned all over and soft when pressed. Fry in batches if the pan is crowded and drain on kitchen paper. Meanwhile, heat the oven to 180 °C.

Cook's tip
Choose glossy, firm, long and slim eggplants. If frying feels daunting, brush them with oil and roast at 220 °C for 30 minutes until soft, then fill the same way. A mix of beef and lamb mince gives a richer flavour.
Cooking it at camp
It works in a Dutch oven. Roast the eggplants whole in their skins on a grill over embers until soft, then slit them, and fry the filling in a pan. Pack them into the Dutch oven and cook for 20–25 minutes with embers on the lid. Frying the filling at home and bringing it in the cooler makes it much easier.
