Cook's tip
Freshly cooked rice is too moist to crisp, so use rice chilled overnight. For safety, cool cooked rice and refrigerate it within 1 hour. Add 1 tsp harissa to the sauce for heat.
Cooking it at camp
Prepare the meatballs and lemon yoghurt at home and pack them in the cooler with the chilled rice in a sealed box. Use one cast-iron pan: crisp the rice first and set it aside, then cook the sauce and meatballs in the same pan to save washing up.
