Cook's tip
Basmati breaks easily in a paella, so use a short grain such as bomba or calasparra. Ordinary short-grain rice works too, but use 10% less stock. If the pan is bigger than your burner, give it a quarter turn every minute or two so the edges cook evenly.
Cooking it at camp
Paella was born over open fires, so it suits a campsite perfectly. Set the wide pan on a grill grate or burner and turn it often if the heat is uneven. Marinate the chicken at home and carry it in the cooler; a stock cube dissolved in hot water is fine for the stock.
