Pilau Masala Honey-Lime Wings with Kachumbari Yogurt Dip
Chicken wings rubbed with pilau spice and oven-baked until crackling crisp, brushed with honey-lime glaze and served with a cool kachumbari yogurt dip.
Method
Pat the wings very thoroughly dry with kitchen paper. In a large bowl, mix the masala, garlic powder, salt and baking powder, add the wings and toss with your hands until evenly coated. The baking powder dries the skin so it crisps as if fried (use baking powder, not baking soda, which tastes bitter).

Line a baking tray with foil, set a wire rack on top and brush it lightly with the oil. Spread the wings skin-side up on the rack without touching, then bake in the oven preheated to 220°C · 1 tray for , turning them once halfway. They are done when the skin is deep golden and blistered and the juices run clear with no pink when you cut into the thickest part.

Cook's tip
Dry skin is everything. If you have time, leave the wings uncovered in the fridge for 1–2 hours after step 1 for even crisper skin. In an air fryer, cook at 200 °C for 20–25 minutes, turning once.
Cooking it at camp
They are great on a charcoal grill. Push the coals to one side and cook the wings on the other (indirect heat) with the lid closed for 25–30 minutes, then glaze and finish over the coals for 1–2 minutes per side. Honey burns fast, so stay by the grill. Keep raw chicken separate from other food in the cooler.
